Second Course

Roasted Beet and Spinach Salad: Roasted beets, baby spinach, mixed greens, goat cheese, sliced Bermuda onion, toasted pumpkin seeds, and Seville orange champagne vinaigrette.

Main Course Selections

Filet Of Beef Steak au Poivre

Pan-seared filet mignon with demiglace and chutney. Plump crab cakes with saffron chive cream sauce. Roasted brussel sprouts and maitre de buttered Yukon gold potatoes.

Colorado Mixed Grill

Braised Pork Osso Bucco with garlic confit demiglace. Roast quail with bourbon brown butter glaze. Roasted brussel sprouts and maitre de buttered Yukon gold potatoes.

Royal Gorge Vegetarian

A colorful variety of roasted, grilled and sauteed seasonal vegetables with Israeli pearl couscous and maitre de buttered Yukon gold potatoes.
