Welcome aboard Colorado’s first class lunch and dinner trains! Your journey begins with a celebratory glass of sparkling wine followed by a curated menu, made from scratch on board. Salud!

A deliciously crafted meal for an unforgettable dining experience! Grilled New York Strip Steak paired with Garlic Buttered Grilled Shrimp. Served with mashed potatoes and seasonal veggies.

Colorado Slow-Roasted Prime Rib

Hand rubbed with garlic and steakhouse spices, our prime rib is seared at high heat then slow-roasted for eight hours to a medium rare finish. Served with au jus, roasted garlic mashed potatoes and seasonal veggies. (Aboard First Class Dinner Trains.)

Colorado Buffalo Short Rib

Tender braised buffalo with confit garlic mashed potatoes, red wine demi-glace sauce, and our seasonal veggies. Garnished with fried yucca. (Aboard First Class Lunch Trains.)

Chicken Marsala

Tender breast of Colorado Red Bird chicken with a mushroom marsala wine sauce. Served with mashed potatoes and seasonal veggies. (Aboard First Class Lunch & Dinner Trains.)

Atlantic Salmon

Brown sugar garam marsala rubbed and seared Atlantic Salmon, served with roasted garlic mashed potatoes and seasonal veggies. (Aboard First Class Lunch & Dinner Trains.)

Vegetable Napoleon

A sculpted stack of grilled vegetables featuring portobello mushroom, eggplant, zucchini, yellow squash, and vine-ripened tomatoes layered with mozzarella and topped with a light marinara. Served over mashed potatoes. (Aboard First Class Lunch & Dinner Trains.)

Italian Panna Cotta

Served with a raspberry coulis and a dollop of fresh whipped cream.

Our dishes are made from scratch in our on-board kitchens and we source locally whenever possible and practical.
